Spicy Sweet Chicken and Rice

So I've been trying to eat better lately, and I've been inventing a few recipes that haven't got huge amounts of fat, salt and sugar in them and are easy/fast/cheap to make. Spicy sweet chicken and rice is one of hte better ones i've come up with.

Ingredients

1 cup instant rice
4 boneless skinless chicken tenderloins
1/2 a bell pepper
1/2 an onion
1 Tablespoon honey
1 cube chicken bullion
salt, pepper, basil, oregano, hot sauce

Since it takes the longest you start the rice first. 1 cup instant rice with 2 cups water, the chickin bullion cube, some basil and oregano. Bring to a boil on the stove, cover and reduce heat to medium. cook until all of the water boils away. Stir occasionally so the rice doesn't stick to the pan.

While hte rice is cooking, you'll want to cut up your chicken and onion into small pieces and the pepper into 1 inch long strips.

Put honey into a pan and add 1/3 cup water. Disolve the honey into the water and bring it to a boil. Add vegetables and chicken, salt, pepper, hot sauce, and some ore basil and oregano. (can skip the hot sauce if you're not big on spicy) Cook on high until all of the honey water boils away. you will need to constantly stir it near the end or it will stick to the pan horribly.

Dish out rice onto a plate and put the chicken and vegetables on top of it. Serve with vegetables and/or salad for a healthy side. Serves 2, but can easily be compounded for more if needed =)
